Flamed Banana Foster
Preparing flamed desserts can be fun if you do it table side.
Use a smaller side table to flame the dessert, not the dining room table - and be very careful.

Serves 4

4 Bananas, peeled and sliced to one-inch chinks
1/2 stick of butter (1/8 pound)
1/4 cups brown sugar
1/2 teaspoon ground cinnamon
1/4 cup dark rum or brandy liquor
Vanilla ice cream or Vanilla frozen yogurt

Assembly

1. Heat butter and brown sugar in a skillet over medium heat, until sugar is dissolved and bubbly; stir in sliced bananas and cinnamon, sauté for a minute while stirring making sure the bananas are coated with sugar mixture. Add rum and carefully ignite with a match, or if using a gas stove, tip pan carefully into the flames and the fumes will ignite. The liquor will burst into flames so be careful. Cook until the flame goes out. Spoon vanilla ice cream into individual small bowls, or custard dishes; spoon banana and sauce on vanilla ice cream.
